Unisoy Jerky Fried Rice



Ingredients:

8 ounces teriyaki flavored Unisoy Vegan Jerky, chopped into small pieces

3 cups cooked brown rice, chilled

½ cup diced carrots

½ cup diced bell pepper

½ cup frozen peas

½ cup chopped green onions

2 garlic cloves, minced

2 tablespoons sesame oil

2 tablespoons low-sodium soy sauce

¼ teaspoon black pepper

¼ teaspoon garlic powder

¼ teaspoon onion powder

½ c silken tofu, blended


Instructions:

  1. Heat a large skillet or wok over medium-high heat. Add the sesame oil and minced garlic, stirring frequently for 30 seconds.

  2. Add the chopped Unisoy jerky to the skillet and cook for 3-5 minutes until browned.

  3. Add the diced carrots, bell pepper, and frozen peas to the skillet and continue cooking for an additional 3-5 minutes, or until the vegetables are tender.

  4. Stir in the chilled brown rice, soy sauce, black pepper, garlic powder, and onion powder. Cook for an additional 2-3 minutes until the rice is heated through.

  5. Push the rice mixture to one side of the skillet and add the silken tofu to the other side. Scramble the tofu until fully cooked, then mix them into the rice mixture.

  6. Stir in the chopped green onions and cook for an additional minute.

  7. Serve hot and enjoy your healthy jerky fried rice!
