Ingredients:
1 cup cooked lentils
1/2 cup walnuts, chopped
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
Salt and pepper, to taste
8 small taco shells or tortillas
1 cup shredded lettuce
1/2 cup diced tomatoes
Avocado Lime Sauce:
Juice of 1 lime
1/4 cup fresh cilantro, chopped
Salt and pepper, to taste
Instructions:
In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté until translucent.
Add the cooked lentils, walnuts, cumin, chili powder, salt, and pepper to the skillet. Cook for an additional 5 minutes, stirring occasionally.
To prepare the sauce, blend the avocado, lime juice, cilantro, salt, and pepper in a food processor or blender until smooth.
Warm the taco shells or tortillas according to the package instructions.
Assemble the tacos by filling each shell with the lentil walnut mixture, shredded lettuce, and diced tomatoes. Drizzle with the avocado lime sauce.
