"Egg"Nog



“Egg”nog


Ingredients:

2 cups unsweetened soy milk 

1 cup canned coconut milk

½ cup raw cashews (soaked for 4 hours or boiled for 10 minutes)

¼ cup maple syrup

1 tsp vanilla extract

½ tsp ground nutmeg

¼ tsp ground cinnamon

Optional: 2-3 tbsp dark rum or bourbon for a boozy version


Instructions:

  1. Blend all ingredients in a high-speed blender until smooth and creamy.

  2. Chill in the fridge for at least an hour before serving.

  3. Sprinkle extra nutmeg on top before serving.


Makes 4 servings.
