Ingredients:
1 cup raw almonds
½ cup dried unsweetened cranberries
½ cup Medjool dates (pitted)
Zest of 1 orange
Juice of ½ orange
1 tsp vanilla extract
¼ cup shredded unsweetened coconut (optional for rolling)
Instructions:
In a food processor, pulse the almonds until finely ground.
Add cranberries, dates, orange zest, orange juice, and vanilla. Process until the mixture sticks together.
Scoop out 1-tablespoon portions, roll into balls, and roll in shredded coconut if desired.
Chill in the fridge for 20 minutes before serving.
