Baked Protein Oatmeal


INGREDIENTS


  • 1 medium ripe banana

  • 1 ½ cups almond milk

  • ⅓ cup maple syrup

  • 1 tsp vanilla extract

  • ¼ cup smooth almond butter

  • 1 tbsp ground flax seeds

  • 2 tsp chia seeds

  • 2 tbsp protein powder

  • 2 tsp ground cinnamon

  • 1 tsp baking powder

  • ½ tsp salt

  • 2 cups gluten-free rolled oats

  • 1 cup blueberries


INSTRUCTIONS

  1. Preheat oven to 375°F. Grease a 9”×9” baking dish.

  2. Combine wet ingredients and mash banana / stir to combine.

  3. In a separate bowl, add the flaxseeds, chia seeds, protein powder, cinnamon, baking powder, salt, and oats. Stir to combine.

  4. Add the dry ingredients to the wet and fold with a spatula to combine. Gently stir in the blueberries. 

  5. Bake for 35-40 mins until set.

  6. Let it cool completely before slicing and serving. Serve with more maple syrup and coconut cream if desired!


Makes 6 servings.
