INGREDIENTS
1 medium ripe banana
1 ½ cups almond milk
⅓ cup maple syrup
1 tsp vanilla extract
¼ cup smooth almond butter
1 tbsp ground flax seeds
2 tsp chia seeds
2 tbsp protein powder
2 tsp ground cinnamon
1 tsp baking powder
½ tsp salt
2 cups gluten-free rolled oats
1 cup blueberries
INSTRUCTIONS
Preheat oven to 375°F. Grease a 9”×9” baking dish.
Combine wet ingredients and mash banana / stir to combine.
In a separate bowl, add the flaxseeds, chia seeds, protein powder, cinnamon, baking powder, salt, and oats. Stir to combine.
Add the dry ingredients to the wet and fold with a spatula to combine. Gently stir in the blueberries.
Bake for 35-40 mins until set.
Let it cool completely before slicing and serving. Serve with more maple syrup and coconut cream if desired!
